Vitamin E is an antioxidant that helps to protect the body from harm. Vitamin E inhibits the oxidation of polyunsaturated fatty acids (cellular membrane components) and other oxygen-sensitive substances such as vitamin A and vitamin C. In premature newborns, vitamin E deficiency can induce irritability, edema, thrombosis, and hemolytic anemia.
